This classic vegetable biryani is a delightful medley of basmati rice, fresh vegetables, and Indian spices. Ideal for family gatherings or festive occasions, this biryani is both satisfying and healthy.
Ingredients
- 1.5 cups Basmati Rice (Soaked 30 minutes)
- 2 tbsp Oil
- 1 tsp Cumin Seeds
- 1 cup Carrot (Diced)
- 1 cup Beans (Chopped)
- 1 cup Peas (Fresh or frozen)
- 1 cup Potato (Diced)
- 1 cup Onion (Sliced)
- 1 tsp Ginger Garlic Paste
- 0.5 tsp Turmeric
- 1 tsp Red Chili Powder
- 1 tsp Garam Masala
- 1 cup Yogurt (Whisked)
- 2 tbsp Coriander Leaves (Chopped, for garnish)
- Salt to taste
- 2 cups Water
Instructions
- Prepare Rice: Soak rice for 30 minutes, then cook until 80% done. Drain and keep aside.
- Cook Vegetables: Heat oil, sauté cumin and onions, add ginger garlic paste, and chopped veggies.
- Add Spices & Yogurt: Mix in turmeric, red chili, garam masala, and yogurt. Cook for 5-7 mins.
- Layering: In a pot, layer veggies and rice. Repeat. Garnish with coriander.
- Final Cooking: Cover and cook on low heat for 15-20 minutes. Serve hot.
